Monday Meal

As you already know, earlier this week husband was craving something BBQ. We don't have a grill and it was much too late to start anything on a slow cooker. So after a little bit of searching, I found this amazing recipe for BBQ chicken. Enjoy!


Ingredients:
6 tbs water
4.5 tbs ketchup
4.5 tbs brown sugar
3 tbs vinegar (we used apple cider vinegar)
1.5 tbs lemon juice
3 tbs worcestershire sauce
1.5 tsp salt
1.5 tsp dry mustard
1.5 tsp chili powder
5 chicken boneless skinless chicken breasts

How to cook it:
1. Preheat the oven to 500 degrees F (260 degrees C). In a small saucepan over medium heat, stir together the water, ketchup, brown sugar, vinegar, lemon juice, and Worcestershire sauce. Season with salt, mustard powder, and chili powder. Simmer the sauce for 15 minutes.
 
2. Place the chicken thighs into an oblong baking dish, and pour the sauce over them. Cover tightly (we just covered it using aluminum foil).
 
3. Bake for 15 minutes in the preheated oven, then reduce the temperature to 300 degrees F (150 degrees C), and bake for one hour. Remove cover, stir and bake uncovered for 15 minutes.


My thoughts:
Oh. My. Goodness. I've never been a BBQ person, and I was very skeptical at first when we were mixing the sauce cause it smelled kind of sour and strange. DON'T LET THIS FOOL YOU! Its a very savory and almost a little sweet flavor, not to mention the chicken was so well cooked that you could cut it with a spoon. No kidding. A spoon. We served it with some mac and cheese and broccoli. It's definitely going into the keeper box, and maybe even the recipes-for-when-we-have-guests box. I'm craving it already!
