In all the excitement of this past week (and by exciting week, I mean it wasn't spent on the couch 90% of the time! Kinda terrible, huh?) I completely forgot to write my Monday Meal post. This one isn't one of my personal favorites, but husband loooooves it so it's going on here anyway. I present, the Tuna and Cheese Biscuit Bake (from the Pillsbury Pantry!
Ingredients:
10 3/4 oz can condensed cheddar cheese soup
2 (6 1/2 oz) cans tuna, drained (we use the water kind, not the oil)
1 cup milk
1/2 cup chopped onion or 2 tbs onion powder
1 tsp chopped parsley or parsley flakes
(next for the biscuit topping)
1 cup unbleached self rising flour
1/2 cup shredded American cheese
1/2 cup milk
2 tbs oil
1 tsp poppyseed (we leave this out)
How to make it:
1. Heat over to 400 degrees Fahrenheit.
2. In a 8 or 9 inch square baking dish, combine cheddar cheese soup, tuna, milk, onion and parsley.
3. Lightly spoon flour into measuring cup; level off.
4. Combine flour and cheese in small bowl. Add milk and oil all at once, stirring only until moistened.
5. Drop biscuit mixture by teaspoonfuls on top of tuna mixture. Sprinkle with poppyseed.
6. Bake for 35 to 45 minutes.
My thoughts:
Confession: I'm a picky eater so I'm not usually the one that eats it. But when I make it for husband, the whole dish is usually gone within the hour. I take that as a pretty good sign!
